Career servers and bartenders are a very special breed.
I have a particular respect for barkeeps because I can walk up and order one of hundreds of cocktails and they never have to look anything up. And if I do ask for something they don't have in their mental rolodex, they're still willing to give it a try. (I always make sure to pull it up on my phone BEFORE I ask if it's something very nonstandard like a Sonic Screwdriver, for which there are, in any case, eight completely different recipes). And then somebody walks up and asks for "something fruity." A good barkeep is worth their weight.
