I see that concern, but no vaccine is ever going to be 100% and most people have accepted that boosters will be needed.
Pfizer and Moderna are already testing vaccines tailored to some of the other variants. As the problem mutations right now are relatively small in number, it should be easy enough to take care of this with boosters. More important is getting vaccines out to lower income countries so we can slow down the breeding of variants. Coronaviruses mutate fairly slowly, so once we get out of the pandemic stage, then variant production will slow down a lot and we probably won't have to worry about vaccine escape. Especially with mRNA vaccines, which are easy to reengineer to match a new variant.
You're absolutely right that we need to get as many people vaccinated as possible as quickly as possible, though.
